8 ounces sushi grade tuna, 1/4 cup kewpie mayonnaise (or regular mayonnaise), 2 tablespoons Sriracha, 1 tablespoon toasted sesame oil, 1 teaspoon Lemon juice ,1 teaspoon Honey, 8 sheets pacific sushi nori, 1 avocado – thinly sliced, 1/2 English cucumber- cut into matchsticks
2 cups sushi rice, 2 tablespoons sugar, 1 teaspoon salt, 1/3 cup rice vinegar
CRISPY FRIED OKRA
4 cup bacon grease – divided, 12 ounces fresh okra – thinly sliced, 1/3 cup fine white cornmeal, 1 teaspoon Kosher salt
